World Potato Day on Friday 30 May is the perfect excuse to level up your chip offering and encourage customers to order a large helping of the humble deep-fried spud.

Respect the Chip
Australia’s Head of Culinary David White tells his students that if you ‘respect the chip’ it will be the most profitable item on your menu.
He explains that each chip in the Edgell range does a different job. “Some are designed to hold, some are defrostable, some have good plate coverage, others are better for yield.”
For example, shoestring fries cook quicker and have better yield (less weight per serve) but have shorter hold time and less potato flavour. Meanwhile, steakhouse chips cook more slowly and have lower yield but are more flavoursome and hold their crunch for longer.
